refactor: switch from Upstash to self-hosted Redis via ioredis

Summary

This PR replaces the Upstash Redis client with ioredis to connect using the self-hosted Redis URL.

Note: This PR is for when we move from upstash to self-hosted Redis.

Changes

• Replaced Upstash SDK with ioredis.
• Updated Redis initialization to use process.env.REDIS_URL.
• Updated Redis usage based on ioredis

How to Test Locally

1. Run a local redis using docker

   docker run --name redis-local -p 6379:6379 -d redis

2. Set REDIS_URL in your .env file.

   REDIS_URL="redis://127.0.0.1:6379"

3. Run the app and verify all works as expected.
