PACE & EMIT Notebook Updates

Hey all,

Making this PR with updated PACE & EMIT collab notebook progress! They're of course not close to being merged yet, but take a look and see how you feel about them as outlines. I've put some of my initial thoughts and comments below:

For 01_Colocate_PACE_EMIT_Data.ipynb:

• We should choose granules that align with our science example topic, when we have it. The current one runs with Australia granules, but these should be changed once we decide how we're moving forward with tutorial 03.

For 02_Align_PACE_EMIT_Grids.ipynb

• Unsure if what is written now is the best method for the regridding, so I'd be happy to iterate on this!
• Some nice interactive holoviews plots could improve this notebook, and is on my list for improvements
