docs: update Discord invite links to current working link

docs: fix Discord invite link and migrate to genlayerlabs organization

Summary

This PR addresses two documentation updates:

1. Fixed broken Discord invite link: The README badge link (discord.gg/VpfmXEMN66) was expired/invalid. Updated to working link (discord.gg/qjCU4AWnKE) that matches the organization's Twitter profile.

2. Migrated GitHub organization references: Updated all references from yeagerai to genlayerlabs across documentation:

   • README.md: Twitter badge URL, git clone command, GitHub Issues link (3 changes)
   • CONTRIBUTING.md: Issue page links, git clone command, docs repository link (4 changes)
   • LICENSE: Copyright holder changed from "YeagerAI" to "GenLayer Labs"

Important note: CONTRIBUTING.md uses a different Discord invite link (discord.gg/8Jm4v89VAu) which is still valid and was intentionally NOT changed per user feedback.

Review & Testing Checklist for Human

• Click the Discord badge at the top of README.md and verify it successfully opens the GenLayer Discord server (this was the broken link)
• Click the "Discord Community" link in the Support section of README.md and verify it works
• Test GitHub organization migration by clicking the "GitHub Issues" link in README.md and confirming it goes to github.com/genlayerlabs/genlayer-testing-suite/issues
• Verify copyright change authorization: Confirm that "GenLayer Labs" is the correct legal entity for copyright (requires legal/business verification, not a code review item)
• Spot check that CONTRIBUTING.md has Discord link discord.gg/8Jm4v89VAu (should NOT be changed to match README)

Notes

• This is a documentation-only change with zero functional code impact
• The CONTRIBUTING.md uses a different but valid Discord invite link than the README - this is intentional, not an oversight
• CI checks passing confirm markdown syntax is valid, but cannot verify that external links work
• The Twitter badge URL was updated from twitter.com/yeagerai to twitter.com/genlayerlabs to match the org migration
