Note, this PR adds
bypassfor testing against the OpenAI api. I generally have found Mox great for behaviour based testing/swapping out logic but when it comes to testing APIs, the conveniences that Plug and Bypass provides I find to be worth the extra dependency. Happy to refactor if don't like the changes.
