Replaced pip with uv for dependency management

• Replacing pip with uv. The provides better management of transitive dependencies and a better upgrade process (separate uv.lock file)
• Split the Dockerfile into a multi-stage process to reduce the size of the final image
• Upgraded dependencies to latest version
