Update deprecated and add missing Velero backup fields

Use up to date velero backup fields

**Describe the solution you'd like**
Make sure that all fields are up to date.

eg:


  defaultVolumesToRestic is now defaultVolumesToFsBackup
  snapshotMoveData is absent

**Additional context**
Use up to date crds from https://github.com/vmware-tanzu/helm-charts/tree/main/charts/velero/crds
