Remove opensafely-matching from v2 dependencies

opensafely-matching at the version installed (0.2.0) does not work with the pandas version installed on the v2 image.

Once matching has been converted to a reusable action we can remove it from the v2 image (where it's never worked anyway, so there are no studies using it)
