Run tests against Meilisearch EE

Description

Starting from Meilisearch v1.28, the community and enterprise editions of Meilisearch have distinct binaries.

To allow full-feature coverage, we want to update this repository to test against the enterprise edition instead of the default, community edition. The repository should use the getmeili/meilisearch-enterprise Docker image.

Tasks

• Update the Docker image used by tests.yml, pre-release-tests.yml, and meilisearch-prototype-tests.yml CI workflows
• Update the Docker image used in docker-compose.yml
