I would love to know more about this project, your Dockerfiles are missing still and I'd like to take a look.
I'm starting a similar project where I use as base the linuxserver.io's alpine image to take advantage of the s6 overlaying and being able to set the UID and GUID of the user running octoprint.

At the moment I'm trying to figure out how to make socat restart automatically.
