Update README to use vim.lsp.config #89
Description
As documented in https://github.com/neovim/nvim-lspconfig, require('lspconfig') is soon to be deprecated and users should migrate to using vim.lsp.config and vim.lsp.enable. The instructions in the README should be updated to account for this.
