This Issue is to track the release for DataFusion 51.0.0 now that the upstream repository has been published (datafusion 51.0.0)

I was trying to update pyiceberg to match the datafusion version we use in the iceberg-rust repo and noticed 51.x hasn't been released yet.

LMK if there's anything I can help with to push this along

oh! looks like #1311 already upgraded all the datafusion related dependencies to use 51
