Allow names of sessions to be changed

It would be nice to allow editing of the labels for each session. Some of the processes have really stupid names that are way too long and obtuse. We'd have to save user preferences in defaults between app invocations, but I'm not sure how stable the IDs are for each process.

If the IDs are always the same, we're good. If they change, we need to understand why and when.
