Inject a custom Jest snapshot serializer

Right now double-quotes are being escaped unnecessarily and it makes diffs unnecessarily opaque. Using a custom serializer, I could probably avoid that kind of crap: https://facebook.github.io/jest/docs/expect.html#expectaddsnapshotserializerserializer
